Allergy free with some hidden zucchini. From Sophie-Safe cooking. Ingredients:
1 1/2 cups zucchini, shredded |
1/2 cup sugar |
1/4 cup canola oil |
1 teaspoon vanilla |
1 1/2 teaspoons apple cider vinegar |
1/4 cup rice milk |
2 cups oat flour |
1/3 cup cocoa |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
2 tablespoons cinnamon |
Directions:
1. Mix zucchini, sugar, oil, vanilla, vinegar and rice milk. 2. Add oat flour, cocoa powder, baking powder, baking soda, salt and cinnamon until mixed. 3. Spoon into lined muffin cups. 4. Bake at 350 for 20 minutes. |
