A family favorite even among the most picky. A great way to hide those vegetables. I like to make these loaves in the winter as well. I freeze grated zucchini and then pull it out, thaw it, drain it, and make it as usual. Ingredients:
2 1/2 cups flour |
1/2 cup cocoa |
2 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
2 cups sugar |
3/4 cup margarine |
4 eggs |
2 teaspoons orange rind |
2 cups of grated zucchini |
1/2 cup milk |
1 cup walnuts (optional) |
1/2 cup shredded coconut |
1 teaspoon vanilla |
Directions:
1. Add all the ingredients from flour to cinnamon in one bowl. 2. Mix all the ingredients from sugar to vanilla together in a second bowl. 3. Combine two mixtures together just until mixture is moist. 4. Pour into two greased loaf pans. 5. Bake at 350°F for 1 hour. |
