Moist rich cake with a hint of almond taste. Great way to end a meal of Steak and Salad or something rich and yummy to munch on when you get the urge to splurge on chocolate. Ingredients:
3 c flour |
1 1/4 ts baking powder and baking soda |
1/4 ts cinnamon |
4 eggs |
3 c sugar |
1 1/2 c oil |
3 squares unsweetened chocolate |
1 1/2 ts vanilla |
1/2 ts almond extract |
3 c grated zucchini |
1 c nuts |
1/2 c chopped dates |
Directions:
1. Sift flour baking powder, baking soda salt and cinnamon. 2. Set aside Beat eggs till frothy. 3. Add sugar and oil. 4. Then chocholate, vanilla and almond. Fold in dry ingredients 5. . Add zuchinni, nuts and dates 6. Pour into greased 10 inch tube pan 7. . Bake 350 for 1 hr 15 minutes. Let stand inverted on cake pan for 20 minutes 8. top with favorite icing |
