This is a great way to use up your extra zucchini and it has less sugar because it is made with honey. Ingredients:
1/2 cup butter |
1/3 cup olive oil |
1 1/4 cups honey |
2 large eggs |
1 tsp vanilla |
1 tsp. baking soda |
1/2 cup skim milk |
1 tsp. lemon juice |
25 g cocoa, dry powder, unsweetened or 5 tbsp |
2 1/2 cups enriched flour |
1/2 tsp. salt |
2 c. grated zucchini |
112 g semi-sweet chocolate chips or 1/2 cup |
1/2 cup walnut pieces |
Directions:
1. Beat the butter and honey. Add the eggs and beat until smooth. Add milk, lemon juice and vanilla. Mix in dry ingredients except the chocolate chips and walnuts. Stir in zucchini. 2. Pour into a greased and floured 13 by 9 inch pan. Top with walnuts and chocolate chips. 3. Bake at 325 degrees F. for 40-45 minutes. 4. Allow to cool and cut into 24 portions. Serve hot or cold. |
