This is a great cake. It is cooked in a tube pan. It is easy as I don't ice it. I serve with caramel sauce or ice cream or both. The raisins and spices make it special. the Recipe comes from a communitee cookbook. Ingredients:
2 1/2 cups flour |
1/2 cup cocoa |
2 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
2 teaspoons vanilla |
3 eggs |
3/4 cup oil |
2 cups peeled and grated zucchini |
1 cup raisins |
1/2 cup milk |
1 cup white sugar |
1 cup brown sugar |
Directions:
1. Mix dry ingredients in bowl. 2. Beat eggs in another bowl. 3. Add the sugar and vanilla- beat well. 4. Add oil and beat. 5. Add dry ingredients alternately with milk. 6. Stir in raisins and zucchini. 7. Pour batter into greased tube pan. 8. Bake 350 for 1 hours. 9. Serve with caramel sauce or ice cream. |
