1/2 cup butter, softened |
1 cup sugar |
2 eggs |
1 teaspoon vanilla extract |
1-1/2 cups king arthur unbleached all-purpose flour |
3 tablespoons baking cocoa |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
1 cup grated unpeeled zucchini |
1/2 cup semisweet chocolate chips |
Directions:
1. In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, salt, baking soda and cinnamon; gradually add to creamed mixture just until moistened. Fold in zucchini and chocolate chips. 2. Spoon into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (12 slices). |
