This was my aunt's recipe. It is very easy to make, plus it makes 2 loaves so you can keep one, and give one away, or freeze it for a later day. Ingredients:
3 cups zucchini, peeled and grated |
1 cup oil |
3 cups sugar |
4 eggs |
3 cups flour |
1 teaspoon baking soda |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons salt |
1/2 cup cocoa powder |
1/2 teaspoon vanilla extract |
Directions:
1. Mix all of the ingredients. 2. Pour into 2 greased and floured bread pans. 3. Bake 350 degrees F. for 1 hour. |
