Chocolate Truffle Cookies |

This melt-in-your- mouth cookie is made with three kinds of chocolate. For an elegant touch, serve them in paper candy cups. Ingredients:
1/2 cup powdered sugar |
1 cup butter or margarine, softened |
1-1/2 tsp. vanilla |
1 oz. (1 square) unsweetened chocolate, melted |
2-1/4 cups flour |
1/4 tsp. salt |
6 oz. pkg. (1 cup semi-sweet chocolate chips) |
1/4 cup powdered sugar |
2 tbs. unsweetened cocoa |
Directions:
1. Heat oven to 375. 2. Lightly grease cookie sheets. In large bowl, 3. beat 1/2 cup powdered sugar and butter until light and fluffy. Add 4. vanilla and unsweetened chocolate; blend well. Lightly spoon flour 5. into measuring cup; level off. At low speed, blend in flour and salt. 6. By hand, stir in chocolate chips. Shape into 1-inch balls; place on 7. greased cookie sheets. Bake for 10 to 12 minutes. Cool completely. 8. In small bowl, combine 1/4 cup powdered sugar and cocoa. Roll 9. cooled cookies in cocoa mixture. 4 dozen cookies. |
