Baum is German for Tree My mom use to make a similar tree cake that consisted of many more layers than in this recipe. Each layer was baked and removed and the cooled layers were sandwiched with some kind of pastry cream . Read more . When the cake was cut, it was unique to look at and layers resembled the rings of a cut tree . Ingredients:
250 g butter |
250 g sugar |
5 eggs |
1/2 of peel from a lemon |
1 tbs amaretto |
1 pinch salt |
1/2 tsp cinnamon |
1/2 tsp ground coriander |
125 g flour |
125 g cornstarch |
75 sliced almonds |
175 g dark-chocolate |
175 g milk chocolate |
40 g marzipan |
15 g sugar |

Directions:
1. Note the baking time is for each layer not for the entire cake 2. Cream butter and sugar 3. Add eggs one at a time 4. Stir in lemon peel, salt, cinnamon, and corriander 5. Combine flour and corn starch and combine into creamed mixture. 6. Stir in almonds into batter 7. Butter well a 24 cm springform pan, bottom and sides 8. Spread smoothly about 2 Tbs batter on the bottom of pan 9. Bake a few inches under broiler 1 to 2 minutes or until light golden, being careful not to burn batter 10. Remove pan from oven and carefully spread on another 2 tbs of batter and repeat baking under the broiler ( about 8 or 9 times ) or until all batter is used up 11. Let cake cool on a rack in pan 12. Meanwhile melt chocolates. 13. Spread some of the melted chocolate thinly on a marble slab and let harden to use as a garnish 14. Cover cake with remaining chocolate 15. Meanwhile mix 10 grams of sugar, with the marzipan, knead together and roll out on a lightly floured surface and cut out star shapes with cookie cutter 16. Place stars decoratively on cake while chocolate is still soft 17. Garnish cake by scraping hardened chocolate forming into curls. 18. Dust cake with remaining 5 gm powder sugar |
