A delicious whipped tofu dessert that is more satisfying than ordinary pudding, while low in calories, fat, and sugar! It's very easy and quick to make, and it's been a hit with everyone I've shared it with. Enjoy! :) Ingredients:
3 ounces silken light tofu |
1 teaspoon cocoa powder |
1 tablespoon jello fat-free sugar-free instant pudding mix, chocolate flavor |
splash skim milk |
dollop fat-free whipped topping |
Directions:
1. Combine tofu, cocoa powder, and pudding mix into blender (I prefer my magic bullet with the short cup and cross blade). Add just enough milk so that the mixture blends without any chunks of tofu, but not so much that it becomes soupy. Mousse should be thick, creamy and fluffy. Transfer to glass and add whipped cream (optional) and whisk to make it extra fluffy. Enjoy! |
