This is a great bread pudding...Chocolate and tequila..Oh yeah. Ingredients:

3/4 cup sugar |
1/2 loaf day old french bread, cut into 1/2 in. slices then divided in 1/2 |
2 tbls. butter, melted |
3/4 cup pineapple, chopped, fresh or canned |
3/4 cup semisweet chocolate chips |
3 eggs, beaten |
2 cups milk |
1/4 cup tequila |
1/4 cup kahlua |
1 tbls. vanilla |
whipped cream |
1 cup whipping cream |
2 tbls. sugar |
cajeta sauce |
4 cups milk |
1/8 tsp. baking soda |
2 cups sugar |
2 tbls. cornstarch |
1/4 cup cold water |
powdered sugar, to garnish |
Directions:
1. Heat oven to 350 2. Bread pudding 3. In saucepan,put sugar in over medium-high heat, stirring occasionally, until sugar becomes a light golden 4. color 5. Pour into a 9-inch glass baking dish 6. Tilt pan to evenly coat bottom and sides with sugar 7. Let cool 8. Line pan with bread slices and drizzle butter evenly over bread 9. Scatter pineapple and chocolate chips over top 10. In a mixing bowl, whisk together eggs, milk, tequila, Kahlua and vanilla 11. Pour mixture over the bread and let stand at room temperature until bread fully absorbs 12. liquid 13. Set baking dish in pan larger than baking dish, filling with enough water to reach one inch up side of dish 14. Bake until pudding is firm, 50-60 minutes 15. Remove from oven and cool on rack 16. Whipped Cream 17. Beat cream and sugar until stiff peaks form with hand mixer 18. Cover and refrigerate until ready to serve 19. Cajeto Sauce 20. In saucepan, heat milk over medium heat 21. Stir in baking soda and heat until almost boiling 22. Add one cup sugar and stir until dissolved 23. Put remaining sugar in skillet and melt slowly over low heat, stirring continuously until the sugar is amber color 24. Slowly add to milk mixture, continuously whisking 25. In bowl, dissolve cornstarch in cold water, stirring until smooth 26. Gradually stir cornstarch mixture into milk mixture and cook over low heat at slow boil until mixture thickens, about 30 27. minutes 28. Cut warm pudding into squares and put on dessert plates 29. Spoon Cajeta sauce around squares and top with a dollop of whipped cream 30. Sift confectioners sugar to garnish |
