These remind me of Christmas because for years they were a mainstay on my family's holiday cookie tray. They are very rich but not TOO sweet. The chocolate filling has the consistency of a brownie, surrounded by a flaky cream cheese pastry crust. Ingredients:
1/4 lb butter |
3 ounces cream cheese |
1 cup flour |
1 cup semi-sweet chocolate chips |
1 tablespoon milk |
1/3 cup sugar |
1 tablespoon butter |
1 teaspoon vanilla |
1 well beaten egg |
walnut halves or pecans, for topping |
Directions:
1. Preheat oven to 350. 2. Mix together ingredients for crust, until soft dough forms, roll dough into small balls. 3. Press each ball into ungreased mini-muffin tin. Set aside. 4. Place chocolate chips into double boiler to melt. 5. Add the milk, sugar, butter, and vanilla, stirring until smooth. 6. Remove from heat and blend in one well beaten egg. 7. Place about 1 tablespoon of the chocolate mixture into the crust and top it with a nut. 8. Bake for 20-25 minutes. |
