They're like little soufflés... or brownies. Soo good. I thought I was doing it wrong when I made them, but in reality the cookies are just kind of weird. The size of the cookies is up to you, but I ended up only needing one baking sheet. Enjoy! Ingredients:
6 oz. semisweet chocolate (chopped) |
2 large egg whites, at room temperature |
1/8 teaspoon cream of tartar |
1/2 teaspoon vanilla extract |
1/4 cup granulated sugar |
3/4 cup finely chopped walnuts |
Directions:
1. Put oven racks in the upper & lower third of the oven. 2. Preheat to 350°F. Line two baking sheets with parchment paper. 3. Put the chocolate in a small saucepan and melt it, stirring ocassionally with a rubber spatula. Remove from heat and set aside. 4. Beat the egg whites with the cream of tartar to soft peaks. With beaters running gradually ad the vanilla and sugar and beat to stiff peaks. 5. Pour the nuts and the melted chocolate over the whites, and using a rubber spatula, gently fold them in. 6. Immediately, spoon the batter onto the baking sheets, leaving 1-inch between the cookies. 7. Bake 10-12 minutes or until the cookies are shiny and cracked. They will be firm on the outside but still chewy on the inside. 8. Using a metal spatula, transfer the cookies to racks to cool. |
