I'm not sure where this cake originated but a very young girl checking me out at Shop Rite who knows I am a caterer gave me this easy recipe. It's a boxed cake mix and a can of soda. I told her it was impossible. Read more . Not so. It's wonderful. Ingredients:
boxed cake mix |
can of soda pop |
oil for pan |
dusting of cocoa powder, confectioners sugar-whatever |
Directions:
1. Preheat oven as instructed on the box 2. Let's say I am making a chocolate cake: 3. Oil and dust the pan (oil: any cocoa mix) 4. Put mix into bowl 5. Dump 3/4 of the can of soda and fold until all is moist 6. Add rest of soda and hand mix 7. Pour in prepared pan 8. For baking directions follow directions on the box ( I usually turn oven down a few degrees and keep an eye on it for doneness. Do not over bake; keep moist. 9. I use these cakes especially for trifles, it is unbelievably moist. 10. SUGGESTIONS: 11. Carrot Cake-Orange Soda 12. Red Velvet Cake-Cherry Soda 13. White Cake-Ginger Ale 14. Spice cake-Ginger Ale 15. And on and on 16. If you are a vegan (or have to cook for one everyday) there are great mixes on the market 17. Make whatever frosting you like 18. For Vegan: Tofutti-Better than Cream Cheese, soy milk, powdered sugar. Add any crushed fruit to the icing. |
