If you like Russian Teacakes and chocolate, you'll love these tasty, tender cookies! Ingredients:
1 1/4 cups butter |
2/3 cup white sugar |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1/8 teaspoon salt |
1/2 cup unsweetened cocoa powder |
2 cups chopped pecans |
1/2 cup confectioners' sugar for decoration |
Directions:
1. In a medium bowl, cream butter and sugar until light and fluffy. Stir in the vanilla. Sift together the flour, salt, and cocoa; stir into the creamed mixture. Mix in the pecans until well blended. Cover, and chill for at least 2 hours. 2. Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Place on ungreased cookie sheets about 2 inches apart. 3. Bake for 20 minutes in preheated oven. Roll in confectioners' sugar when cooled. |
