Chocolate Sheet Cake (Lady's) |

This is my great-grandmother's recipe, whose nickname was Lady. The cake is extremely moist, almost gooey in the center, and the icing is very fudge-like. Ingredients:
4 tablespoons cocoa powder |
8 tablespoons butter (melted) |
1 cup water |
1/2 cup shortening (melted) |
2 cups sugar |
2 cups flour |
1/2 cup buttermilk |
1 teaspoon baking soda (scant) |
2 eggs |
1 teaspoon vanilla |
1/2 teaspoon cinnamon |
8 tablespoons butter |
4 tablespoons cocoa powder |
6 tablespoons evaporated milk |
1 (16 ounce) box powdered sugar (sifted) |
Directions:
1. Preheat oven to 350. 2. In pot on stove combine and bring to a boil 1st 4 ingredients. 3. Pour into mixing bowl with sugar and flour. 4. Mix. 5. Add buttermilk, soda, vanilla, and cinnamon. 6. Bake for 25 minutes in a 10X14 pan. (Check center of cake with a toothpick for doneness; it's all right for a few moist crumbs to stick to the toothpick.). 7. While cake is baking, make frosting:. 8. In pot on stove combine and bring to a boil butter, cocoa, and evaporated milk. 9. Pour into mixing bowl with powdered sugar. 10. Mix. 11. Add vanilla. Icing will be very thick; you may thin it with a few drops of evaporated milk if desired, but keep it thick. 12. Ice cake as soon as it comes out of the oven. |
