Chocolate Sauce

A smooth chocolate sauce good with ice cream or fruit.
Ingredients:
3 1/2 tbsp / 50g cocoa powder
3 1/2 tbsp / 50g caster sugar
6 1/2 /100ml water
5 tbsp / 75ml double cream
Directions:
1. Sift cocoa powder into bowl and whisk with caster sugar.
2. Add water and mix until smooth.
3. Pour into non-stick sauce pan and bring to a boil, stirring constantly.
4. Cook gently for 3 minutes., stirring frequently.
5. Remove from heat and add double cream, mixing until very smooth. You may seive the mixture for even further smoothness.
6. Cool completely and then chill for two hours before using.
