Ingredients:
1 1/2 cups sugar |
1/2 cup plus 1 tablespoon all-purpose flour |
1/4 cup plus 2 teaspoons cocoa |
1/8 teaspoon salt |
2 1/4 cups milk, scalded |
3 eggs, beaten |
1 tablespoon butter or margarine |
1 1/2 teaspoons vanilla extract |
1 baked (9-inch) pastry shell |
sweetened whipped cream |
chocolate curls |
Directions:
1. Combine sugar, flour, cocoa, and salt in a large heavy saucepan, stirring to remove lumps. Gradually add scalded milk, stirring until well blended. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Cook an additional minute, stirring constantly to prevent scorching. 2. Gradually stir one-fourth of hot mixture into beaten eggs; add to remaining hot mixture, stirring constantly. Cook, stirring constantly, 2 minutes or until mixture thickens. Remove from heat; add butter and vanilla, stirring until butter melts. Pour mixture into baked pastry shell; chill thoroughly. To serve, garnish with whipped cream and chocolate curls. |
