Here's an easy pie that's always a crowd pleaser. Consider serving it with whipped cream. If you whip the cream yourself, try flavoring it with a little vanilla or brandy. I found this recipe in Pop It, Stir It, Fix It, Serve It. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
9 inches ready-made pie crusts |
1/2 cup raspberry jam |
1 cup sugar |
1/4 cup all-purpose flour |
1/2 teaspoon salt |
2 eggs, beaten |
1/2 cup unsalted butter, melted (1 stick) |
1 cup semi-sweet chocolate chips |
Directions:
1. Preheat the oven to 350. Thaw or prepare the pie crust according to the package directions. Melt the jam, and let it cool while you assemble the pie. 2. In a medium sized mixing bowl, combine the sugar, flour, and salt with a fork to sift. Add the eggs and stir. Add the butter and melted jam, and stir. Stir in the chocolate chips, then pour into the pie crust. 3. Bake on a cookie sheet (to prevent oven splillage) for 45 minutes, or until the top has firmed. Let cool before serving. You may also serve it chilled. |
