Chocolate Pumpkin Mini Cakes |

I developed this for my Weight Watchers diet. I found the recipes calling for 1 can of pumpkin and 1 cake mix were too stiff and dry, so I tinkered around with it. Ingredients:
1 yellow cake mix |
1 package sugar-free instant chocolate pudding mix |
1 can pumpkin |
1 cup water |
1/2 cup egg substitute |
Directions:
1. Pre heat Oven to 350. 2. Mix all ingredients in bowl. 3. Spray muffin tins with cooking spray. 4. Fill tins 3/4 full. 5. Bake 20 Minutes. |
