Just a wonderful chocolate pie! Ingredients:
1-1/2 cups sugar |
5 tablespoons all purpose flour |
4 tablespoons cocoa |
1/4 teaspoon salt |
2 cups whole milk |
1/2 stick butter |
3 egg yolks, well-beaten |
1 teaspoon vanilla extract |
meringue |
3 egg whites |
1/4 teaspoon cream of tartar |
6 tablespoons sugar |
note: pie may also be topped with 1/2 pint of sweetened whipped cream and garnished with chocolate shavings |
Directions:
1. In large bowl, combine all ingredients 2. Pour into saucepan 3. Cook over medium heat in double-boiler, stirring almost constantly, until thick, resembling custard 4. Cool, pour into a *baked* pie crust 5. Top with meringue 6. Place in a 350 degree oven until lightly browned 7. MERINGUE 8. In mixer bowl, with an electric mixer, beat egg whites and cream of tartar until white and wet 9. With mixer running, gradually add 1 tablespoon sugar at a time 10. Beat until satiny and tall peaks are standing 11. NOTE: the pie filling may be made in a heavy duty saucepan only, but *constant* stirring with a whisk is required |
