Ingredients:
1 (7-ounce) package chocolate-chocolate chip muffin mix |
1/3 cup fat-free milk |
2 tablespoons unsweetened applesauce |
1 egg, lightly beaten |
1/3 cup crushed peppermint candy (about 12 round peppermint candies) |
vegetable cooking spray |
Directions:
1. Combine first 4 ingredients in a small bowl. Stir just until dry ingredients are moistened. Fold in peppermint candy. 2. Spoon batter into a muffin pan coated with cooking spray, filling two-thirds full. Bake at 425° for 13 to 15 minutes or until tops spring back when lightly touched. Remove from pan immediately. |
