Chocolate Peppermint Ice Cream Pie

This is an incredible pie sure to please all. It is very rich so a little goes a long way. Easy to make and oh so high in the taste department. Enjoy
Ingredients:
2 ounces unsweetened chocolate
3 tablespoons butter
2/3 cup evaporated milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 quart peppermint ice cream softened
9 inch baked pastry shell
meringue
3 egg whites
6 tablespoons granulated sugar
1 tablespoon water
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
3 tablespoons crushed peppermint stick candy
Directions:
1. In heavy saucepan melt chocolate and butter over low heat then stir in milk and sugar.
2. Cook and stir for 8 minutes or until sugar is dissolved.
3. Remove from heat then stir in vanilla and cool completely.
4. Spread half of the ice cream into pastry shell then freeze until firm.
5. Spread half of the chocolate mixture over ice cream then freeze until set.
6. Repeat layers then freeze for several hours or overnight.
7. In a heavy saucepan combine egg whites, sugar, water and cream of tartar.
8. With hand mixer beat on low speed for 1 minute.
9. Continue beating over low heat until mixture reaches 160° about 12 minutes.
10. Pour into bowl of a heavy duty stand mixer then add vanilla.
11. Beat on high until frosting forms stiff peaks about 7 minutes.
12. Fold in peppermint candy then spread over top of pie.
13. Cover and freeze until serving.
