Chocolate Peanut Butter Snowballs |

A favorite of peanut butter fans! From What's Cooking Magazine. Ingredients:
8 semi-sweet chocolate baking squares |
1/2 cup peanut butter |
2 cups cool whip |
1/4 cup icing sugar |
Directions:
1. Microwave chocolate in a large microwavable bowl on medium 2 minutes or until chocolate is almost melted, stirring after 1 minute Stir until chocolate is completely melted. 2. Stir in peanut butter until smooth. Cool to room temperature. Gently stir in the Cool Whip. 3. Chill for 1 hour. 4. Scoop peanut butter mixture with melon baller or teaspoon, then shape into 1in balls. 5. Roll balls in icing sugar. 6. Keep stored in refrigerator. 7. *Variation: Prepare as directed, but roll in finely chopped pecans, coconut, grated chocolate, etc. |
