I found this in Betty Crocker's Cookie Book (1998) but I have been making these since I was in younger. These are different than a lot of other similar recipes because they have chocolate chips in them instead of cocoa. I just guessed on how many this makes and cooking time is chilling time. Ingredients:
6 ounces semi-sweet chocolate chips (1 cup) |
1/4 cup light corn syrup |
1/4 cup peanut butter |
2 tablespoons milk |
1 teaspoon vanilla |
2 cups quick-cooking oats |
1 cup peanuts, chopped (i use walnuts) |
Directions:
1. Cover cookie sheet with waxed paper or foil. 2. Heat chocolate chips, corn syrup, peanut butter, milk and vanilla in a 3 quart saucepan over medium heat, stirring constantly, until choclate is melted and mixture is smooth; remove from heat. Stir in oats and peanuts until well coated. 3. Drop mixture by rounded tablespoonfuls onto waxed paper. Refrigerate uncovered about 1 hour or until firm. Store covered in refrigerator. |
