Chocolate cups filled with a peanut butter mousse. Ingredients:

12 6-inch aluninium foil squares |
8 ounces dark or milk chocolate, melted |
the mousse |
8 ounce cream cheese, softened |
1 cup creamy peanut butter |
2/3 cup heavy cream |
1/4 cup granulated sugar |
1/4 teaspoon vanilla |
Directions:
1. Line 12 ramekins with aluminum foil. 2. Pushing down to shape the foil ramekins. 3. Using 1 slightly heaped tablespoon, portion chocolate into each ramekin. 4. Spread with back of spoon on the sides.. 5. Refrigerate 30 -40 minutes. 6. THE MOUSSE 7. =========== 8. Place cream cheese, peanut butter and sugar in a bowl. 9. Mix well. 10. Beat on high for 1 minute. 11. Beat cream and vanilla together until soft peaks form. 12. Fold into cream cheese. 13. Take foil off the chocolate cups. 14. Fill with filling. 15. Refrigerate 30 minutes before serving. |
