Chocolate-peanut Butter Cookies |

Had to find a cookie for a friend who loves chocolate & peanut butter, This is just what I was looking for and I added a few items more to the recipe Ingredients:
1 cup butter softened |
1-1/2 creamy peanut butter |
2-1/2 cups firmly packed brown sugar |
2 large eggs |
1 egg white |
1/2 cup sour cream |
2 tsp vanilla extract |
1 tsp coffee extract |
3-1/2 cup bread flour (i used all purpose) |
1 tbsp baking soda (yes tablespoon) |
1/2 tsp salt |
2 cups sweetened flaked coconut |
2 cups semi-sweet chocolate morsels |
1 cup mini-semi sweet chocolate morsels |
1-1/2 cup peanut butter morsels |
yields 7 dozen cookies |
Directions:
1. :Preheast oven to 350 2. In large bowl, beat butter and peanut butter at medium speed with electric mixer till creamy 3. Add brown sugar, beating till creamy 4. Beat in eggs, egg white, sour cream and extracts till combined 5. In medium bowl combine flour, baking soda and salt 6. Gradually add to butter mixture. 7. Add coconut and morsels beating until combined (I used a spoon) 8. Drop batter by heaping tablespoons, 2 apart onto ungreased cookie sheets 9. Bake for 10-15 minutes or longer till lightly browned (if not cooked long enough-they will be doughy) 10. Let cool on pan for 2 minutes and then move to wire racks to cool completely 11. Store in air tight container |
