1/3 cup peanut butter |
3/4 cup sugar |
2 eggs |
1 1/2 cups flour |
1/3 cup cocoa |
3/4 tsp. baking soda |
1/4 tsp. salt |
1/2 cup peanuts, finely chopped |
1 1/2 cups semi sweet mini chips |
1 1/2 tbls. creamy peanut butter |
1 1/2 tbls. shortening |
Directions:
1. Preheat oven to 325 2. In mixing bowl, beat peanut butter and sugar with mixer until creamy 3. Add eggs and continue to beat until blended 4. Stir together flour, cocoa, baking soda, and salt 5. Add to peanut butter mixture, mixing on low until blended 6. On lightly floured surface, turn out dough and knead in peanuts and 1/2 cup mini chips 7. Shape dough into 13x3 log on a greased baking sheet 8. Bake 40 minutes 9. Put on rack until cool 10. With a serrated knife, in a gentle sawing motion, cut log on the diagonal into 1/2 thick slices 11. Put on greased baking sheet 12. Bake for 7 minutes, turn cookie over, and bake another 7 minutes 13. Cool on rack 14. In saucepan, add 1 cup mini chips, 1 1/2 tbls. peanut butter, and shortening and cook over low heat until melted 15. Dip one end of cookie into chocolate mixture 16. Put on waxed paper until chocolate hardens |
