I love this! It looks so elegant, tastes so dreamy, I did this at a dinner party last week and it went down extra well. I use one of my favorites again Mascarpone cheese.
Ingredients:
filo pastry, shop bought
coco powder
1/2 a tub (125g) mascarpone cheese
2 tblsp chocolate chips
1 tblsp honey
strawberries, sliced
Directions:
1. Preheat oven 180c
2. Dust the work surface with coco powder
3. Lay out one sheet of filo pastry and sprinkle with coco powder
4. Fold the pastry in half , sprinkle again with coco powder then roll out.
5. Slice into 3 oblong shapes using a very sharp knife or cut with scissors.
6. Put the pastry onto a baking sheet and and bake for about 5 minutes
7. When cooked remove from oven and let cool for a few minutes
8. You will then have 6 thin oblongs of pastry,
9. Meanwhile mix together the mascarpone, chocolate chips and honey
10. Place a single sheet of pastry onto a serving plate
11. Spoon the mixture on to the pastry (I used 2 teaspoons for this)
12. Then top with some of the sliced strawberries, repeat with a second piece of pastry, then stack and top with a plain piece of pastry
13. Decorate with a teaspoon of the mascarpone mixture and more sliced strawberries.
14. Repeat this for each serving.
15. I served this with a dribble of cream

17. NOTE!!
18. If the pastry breaks, don't worry it still looks good patched up use the worst one for the middle layer.
19. It doesn't make the taste any less delicious.
20. Also I am sure this could be just as delicious made with other berries such as raspberries.

22. What I did the last time I made these (yesterday) I melted some chocolate and drizzled it over the top pastry stack. I also made a strawberry coulis to drizzle on the plate it made it extra special.
