Chocolate Orange Shortbread Cookies |

This recipe is from the company that makes the famous Terry's Chocolate Oranges that you usually see at Christmas time. They are delicious. Ingredients:
1 c butter, softened |
1/2 c. superfine sugar |
2 c flour |
1/2 tsp. grated orange peel |
1 terry's chocolate orange, separated into 20 segments, cut in half |
Directions:
1. Preheat oven to 350. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Gradually add flour, beating after each addition until well blended. 2. Roll dough into 20 balls, each about 1 1/2 diameter; flatten with palm of hand. Top each with 1 chocloate pice; wrap dough around the chocolate to completely enclose. (The first time I made them they were very hard to bite because of the chocolate inside so I now chop this piece into 3-4 smaller pieces) Place 2 inches apart, on ungreased baking sheet. Flatten slightly. 3. Bake 20 minutes, remove from oven and immediately put one of the remaining halfs of chocolate on each cookie. (This full piece melts nicely). Transfer cookies to wire racks and cool 10 min. before serving. 4. Note: Now that I chop the inner piece, these are a favorite of everyone and I make them every year. |
