Chocolate Orange Cheesecake |

This rich, marbled cheesecake is a great addition to any dessert table. The combination of orange and chocolate is a classic. Ingredients:
3/4 cup chocolate wafer cookie crumbs |
1/4 cup sugar |
1 1/2 tablespoons butter; melted |
3/8 cup semisweet chocolate; melted |
24 ounces cream cheese; softened |
1 1/3 cups sugar |
3 eggs |
1 1/2 tablespoons fresh orange juice |
3/4 teaspoon grated orange rind |
Directions:
1. Combine chocolate wafer crumbs, 1/4 cup sugar and melted butter. 2. Press onto bottom of 9 inch springform pan that has been sprayed with pan release spray. 3. Bake at 325 degrees for 8 minutes, remove from oven. 4. Melt chocolate and reserve. 5. Combine softened cream cheese and sugar in mixer, mix until smooth. 6. Add eggs, one at a time and mix just until blended (do not overbeat). 7. Add orange juice and rind and combine. 8. Reserve 1 1/4 cups batter, pour remainder into pan. 9. Mix melted chocolate into reserved batter, then swirl chocolate batter through batter in pan for a marbled effect. 10. Bake for 1 hour, then turn oven off and leave in oven for an additional 20 minutes. 11. Cool cheesecake in refrigerator for 6 hours or overnight before serving. |
