Delicious chocolate and orange cake with cream cheese frosting. Lower fat. Ingredients:
2tsp plus 1/3c baking cocoa,divided |
1/3c quick-cooking oats |
2/3c reduced-fat sour cream |
1/3c sugar blend |
2 eggs |
3tbs triple sec or orange juice |
2tbs butter,melted |
5tsp canola oil |
1tsp vanila extract |
2/3c flour |
1tsp baking powder |
1/2tsp baking soda |
1/4tsp salt |
1/4c mini sem-sweet chocolate chips |
2tsp grated orange peel |
frosting |
4oz. reduced-fat cream cheese |
1/4c confectioners sugar |
2tsp grated orange peel |
2tsp orange juice |
Directions:
1. Coat an 8 square baking dish with cooking spray and sprinkle with 2 tsp. cocoa;set aside. Place oats in a small food processor;cover and process till ground. Set aside 2. In a large bowl,beat the sour cream,sugar blend,eggs,Triple Sec,butter,oil and vanilla until well blended. Combine the flour,baking powder,baking soda,salt and remaining cocoa;gradually beat into sour cream mixture until blended. Stir in chocolate chips and orange peel. 3. Transfer to reserved dish. Bake at 350 for 20-25 mins. or till toothpick comes out clean. Cool completely on wire rack. 4. Frosting: In a small bowl,beat cream cheese until fluffy. Add confectioners sugar,orange peel and juice;beat until smooth. Frost top of cake. |
