Chocolate Orange Biscotti |

From the American egg board a holiday biscotti recipe. It's very easy if you weigh ingredients on a kitchen scale Ingredients:
10 oz of butter, softened to room temp |
1 pound 6 oz sugar |
10 oz liquid whole eggs ( fresh or frozen thawed) |
3 tsp grated orange peel |
2 tsp of either vanilla, almond or orange extract |
1 lb 9 oz flour, weigh |
2 tsp baking powder |
3/4 tsp salt |
8 oz mini chocolate chips |
Directions:
1. Cream butter 2. Blend in eggs 3. Mix and sift dry ingredients together. 4. Blend into creamed mixture. 5. Blend and mix in chocolate chips 6. Divide into 4 pieces 7. Roll each into a log shape 8. Placed on greased or paper lined baking sheets, 5 inches apart 9. Bake 350F for 10 minutes 10. Use a serrated knife to slice/score accross rolls into 3/4 inch slices 11. Bake 10 minutes cut side down 12. Turn over and bake another 10 minutes 13. Cool 14. May cut recipe in half 15. These freeze well |
