A runner up's winning recipe in the Iowa Food Council's annual cooking contest. Ingredients:
1 1/4 cups vanilla wafers, crushed |
1/3 cup butter |
1/4 cup granulated sugar |
4 eggs |
1 cup light-colored corn syrup |
1/2 cup light brown sugar, packed |
1/2 cup butter, softened |
1 teaspoon vanilla |
1/2 cup sliced almonds |
1/3 cup mini semisweet chocolate piece (i prefer milk chocolate) |
Directions:
1. Preheat oven to 350°F Line a 9-inch springform pan with parchment paper. Do not grease. 2. In a bowl, combine vanilla wafers, 1/3 cup butter, and granulated sugar. Pour mixture into prepared pan, and press mixture evenly over the bottom and sides of the pan. 3. In a large bowl, beat eggs with a fork. Stir in corn syrup. Add brown sugar, 1/2 cup butter, and vanilla and stir until sugar is dissolved. Stir in almonds and chocolate. Place prepared pan on a baking sheet. Carefully pour filling into pan and bake in a 350°F oven for 40 minutes. Remove the outer ring of the springform pan before presentation. |
