Chocolate Mousse in Chocolate Cups |

A delightful little dessert. :) from my sister in law Debbie. Ingredients:
2 cups heavy cream |
6 ounces semi-sweet chocolate chips (or double chocolate ghirardelli) |
1/4 cup confectioners' sugar |
1 teaspoon vanilla extract |
6 ounces chocolate chips |
cupcake liners |
Directions:
1. Bring 1/2 cup cream to simmer in small saucepan. 2. Add chocolate; turn off heat. 3. Cover and let sit 5 minutes. 4. Stir until smooth. 5. Pour into large bowl. 6. Chill bowl and beaters of electric mixer. 7. Beat cream, sugar and vanilla until soft peaks form. 8. Add 1/3 of this into chocolate mixture to make it lighter. 9. Gently fold into the rest of the whipped cream. 10. To make chocolate cups, melt chocolate chips. 11. Using a pastry brush, paint the chocolate onto the cupcake liners. 12. Put in freezer. 13. When frozen, put some mousse into each chocolate cup. |
