This is a somewhat lighter version of chocolate mousse that I clipped from a magazine. It keeps in the refrigerator for several days...if it lasts that long. NOTE: Cooking time does not include cooling or chilling time. Ingredients:
1/3 cup cocoa powder, unsweetened |
1 cup evaporated skim milk, undiluted |
3 eggs, separated |
1/8 teaspoon salt |
1/4 cup sugar |
1 teaspoon sugar |
Directions:
1. In a pan over low heat, whisk the cocoa, evaporated milk, egg yolks, salt and 1/4 cup sugar until smooth and slightly thickened. This should take about 5 minutes. Pour into a bowl, cover & cool for 1 hour. 2. Beat egg whites until soft peaks form. Add the 1 teaspoon sugar and beat until stiff. 3. Stir 1/4 of the egg whites into the cooled chocolate mixture, then fold in the remainder. Pour into glasses. Chill at least 2 hours before serving. |
