This recipe is taken from De Vlaamsche Pot by Marie Cattoor. There must be 1000 recipes for chocolate mousse, but here is a Belgian version of this wonderful dessert. 20 minutes preparation time and 2-3 hours in the refrigerator. Ingredients:
50 g chocolate, with a cocoa content of over 75 |
2 eggs, separated |
25 g sugar |
Directions:
1. Melt the chocolate while constantly stirring in a double boiler over simmering water. In a bowl beat the egg yolks with the sugar until you get a thick cream. Carefully add while stirring the melted chocolate to the egg yolk-sugar mixture and cool it down while stirring over a pan of ice. Beat the egg whites until they form stiff peaks. Fold the beaten whites carefully into the cool yolks-sugar-chocolate mixture. Using 4 serving dishes divide the mousse evenly between them, then place these in the refrigerator for at least 2-3 hours. Serve with whipped cream. |
