Chocolate Molten Cakes

The perfect molten cake!
Ingredients:
1 1/2 cups unsalted butter (room temperature)
12 ounces semisweet chocolate-coarsely chopped
8 large egg yolks, plus 7 large eggs
1 1/2 cups confectioners sugar
3/4 cup all purpose flour

granulated sugar
Directions:
1. Preheat oven to 350
2. Butter 6 ramekins ( 6 ounce size)
3. Sprinkle the butter ramekins with granulated sugar and tap out excess sugar
4. In a double boiler set over barely simmering water, melt the butter and chocolate and then remove from heat.
5. Beat eggs in a mixer with the whisk on low speed for about 2 minutes
6. Continue to mix and add the chocolate mixture to the eggs, mix for another two minutes
7. Add the flour and confectioners sugar to the mix and beat for 30 seconds or until well mixed on Medium speed
8. Pour the batter in the ramekins leaving about a 1/4 of space from the top.
9. Bake on a cookie sheet for 18 to 20 minutes.
10. Remove from oven and turn upside down onto a plate immediately.
11. Centers will be soft.
