Chocolate Mint Cut out Cookies |

One of my husband's favorite cookies. They come out soft and chewy if you cook them just right. Frost them if you want; sometimes I don't. Ingredients:
1 cup butter, softened |
1 cup sugar |
1 egg |
1 teaspoon vanilla |
1/2 teaspoon peppermint extract |
2 cups flour |
1/2 cup unsweetened cocoa |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 cups powdered sugar |
1/4 cup butter, softened |
1/2 teaspoon peppermint extract |
1 -2 tablespoon milk |
Directions:
1. Cream the butter and sugar. Add the egg and extracts beating until fluffy. Stir in all the remaining dry ingredients on low speed until well mixed. 2. Divide the dough in half; wrap in plastic wrap and refrigerate 1 hour. 3. Roll dough on a lightly floured board to 1/8th inch thickness. Cut into shapes and place on ungreased cookie sheets. 4. Bake at 400 degrees F for 6-8 minutes or until set. Cool. 5. For frosting: combine the butter, sugar and extract. Gradually add just enough milk for spreading consistency. |
