Chocolate Meringue Cookies |

I love meringue cookies and this cookie is light and delicious. Would be great on a Christmas cookie tray. Ingredients:
3 egg whites |
1/8 teaspoon cream of tartar |
1/2 teaspoon vanilla extract |
2/3 cup sugar |
1 tablespoon unsweetened cocoa powder |
1/3 cup semi-sweet chocolate chips (i used the mini chocolate chips) |
Directions:
1. Preheat oven to 300 degrees. 2. Combine egg whites, cream of tartar and vanilla. 3. Beat until the whites form soft peaks. 4. Slowly add sugar; beat until stiff peaks form and mixture becomes glossy. 5. Fold in cocoa and chocolate chips by hand. 6. Drop mixture by teaspoonfuls onto a greased cookie sheet (I used parchment paper). 7. Bake for 25-30 minutes. 8. Cool on wire rack. 9. Store in airtight container. |
