Chocolate Mayonnaise Cake |

My sister-in-law gave me a cookbook a couple years ago for Christmas and I found this one in there. It's super-easy and only has a few ingredients. And wow! it is soooooo moist and you don't even need icing on it! I just dust it with powdered sugar and it's good to go! I make mine with olive oil mayonnaise to cut some of the calories, but it's good so I use it for a quick sweet treat for the fam! Ingredients:
2 cups flour |
1 cup sugar |
1/4 cup baking cocoa |
2 teaspoons baking soda |
1 dash salt |
1 cup water |
1 cup olive oil mayonnaise |
1 teaspoon vanilla |
Directions:
1. Grease 9 inch square baking pan. 2. Heat oven to 350. 3. Combine dry ingredients in a large mixing bowl. 4. Add the water, mayo, and vanilla; mix until well blended and almost smooth. 5. Pour into prepared pan and bake for 30-35 minutes- or until toothpick comes out clean. 6. Note: If you use a glass pan, you may have to bake it for up to an hour! I recommend a metal pan. |
