Chocolate Mascarpone Pudding |

Ingredients:
4 egg yolks |
1/2 cup sugar |
1/2 teaspoon vanilla |
1/4 cup unsweetened cocoa powder |
1/2 lb mascarpone |
1/4 cup marsala |
1/2 cup whipped cream |
3/4 cup walnuts, toasted |
Directions:
1. In a big metal bowl, beat the egg yolks and sugar until light and fluffy. 2. Place the bowl over a saucepan, half filled with simmering water, and whisk until “ribbons” form. 3. Still whisking, add the vanilla, cocoa, and mascarpone; beat until smooth. 4. Slowly add the Marsala, whisking constantly until the mixture thickens. 5. Remove form the heat and spoon into pudding bowls, about 1/2 cup each. 6. Chill until set. 7. Pipe the whipped cream on top and sprinkle with the nuts. |
