1 cup all purpose flour |
3 tablespoons cocoa powder |
2 teaspoons baking powder |
1/2 teaspoon salt |
3 eggs(large) |
1 teaspoon vanilla extract |
1 cup granulated sugar |
1/2 cup boiling water |
for marshmallow filling |
1 cup whipping cream |
1 teaspoon vanilla extract |
1 1/2 cup miniature marshmallow |
Directions:
1. for marshmallow filling: 2. whip cream,stir in vanilla extract and marshmallow 3. for the cake: 4. measure flour, add cocoa powder,baking powder and salt to flour.stir to blend. 5. beat eggs and vanilla with mixer until light. 6. add sugar gradually 7. continue to beat until light and fluffy. 8. add blended dry ingredients to egg mixture with electric mixer(low speed). 9. add boiling water. 10. mix well. 11. pour into greased wax paper lined 10x15 inch jellyroll pan. 12. bake at 400 degreesF for 15 to 18 mins. 13. loosen edges and turn out of pan immediately onto tea towel sprinkled with confectioners sugar. 14. remove wax paper 15. turn rough edges from cake 16. roll up carefully in tea towel 17. cool on rack. 18. unrool cake. 19. spread evenly with marshmallow filling 20. roll up carefully 21. chill for 2 hours or until firm. |
