Chocolate Marble Cheesecake |

This is a delicious cheesecake. Im not fond of baked cheesecakes, but had this at a friend's (who gave me the recipe) and it was fantastic. Have not made it myself yet, but will definately try it soon! Ingredients:
125g gingersnap biscuits |
2 tbs cocoa powder |
40g butter |
400g cream cheese |
150g caster sugar |
3 eggs |
2 tsp vanilla essence |
150ml double cream |
200g plain dark chocolate, broken into pieces |
pouring cream and chocolate sauce, to serve |
Directions:
1. Put the biscuits in a polythene bag and crush with a rolling pin, then mix with the cocoa 2. Melt the butter in a saucepan and stir in the biscuit mixture 3. Press the mixture into the base of 20cm spring-form cake tin 4. Beat the cream cheese to soften 5. Then beat in the sugar, eggs, vanilla essence and cream 6. Melt the chocolate in a heatproof bowl over gently simmering water 7. Spoon about one-third of the cream cheese mixture into a seperate bowl and beat the chocolate into that 8. Pour the plain cream cheese mixture into the tin 9. Then place spoonfuls of the cream cheese / chocolate mixture over it 10. Use a knife to swirl the mixtures together lightly to create a marbled effect 11. Bake in a preheated oven for 35-40 minutes or until the centre of the cheesecake feels just set 12. Turn off the oven and leave the cheesecake to cool in it, before transfering it to the refrigerator 13. Serve chilled with pouring cream and chocolate sauce |
