Chocolate Malted Milk Jelly |

Agar agar layers in both plain malt and dark chocolate make these glasses a fun-to-look-at, cooling treat. If you cannot find agar, substitute an equal amount of (unflavoured) gelatine. Ingredients:

1 tbsp agar agar powder |
2 cups water |
1/4 cup unsweetened cocoa powder |
1/3 cup sugar |
1/4 tsp salt |
1 cup skim milk |
---malt layer |
1 tbsp agar agar powder |
1 1/2 cups water |
3/4 cup plain malt horlicks mix |
1/3 cup sugar |
1 cup *evaporated* skim milk (not sweetened condensed) |
1/4 tsp vanilla |
Directions:
1. -Chocolate Layer- 2. Combine agar, water and cocoa in a saucepan, blending well. 3. Bring to a simmer and cook, whisking, 5 minutes. 4. Remove from heat, stir in sugar, salt and milk. 5. Pour evenly into 6 glasses or cups and let stand (in refrigerator) 2 hours. 6. -Malt Layer- 7. Combine agar, water and Ovaltine in a saucepan, blending well. 8. Bring to a simmer and cook, whisking, 5 minutes. 9. Remove from heat, stir in sugar, milk and vanilla. 10. Carefully ladle over the chocolate jelly in the glasses. 11. Refrigerate until firm. |
