Chocolate-Glazed Peppermint Cookies |

I received a flyer in the mail today for a new cookbook called Pillsbury Christmas 2008 and there were 2 free recipes included. This is one of them. Ingredients:
1 (18 ounce) package refrigerated sugar cookie dough, pillsbury, well chilled |
3 tablespoons peppermint candies, the hard candies, finely crushed |
1/2 cup semi-sweet chocolate chips |
1 1/2 teaspoons shortening |
Directions:
1. Heat oven to 350 degrees. Cut cookie dough into 1/4-inch slices. Place slices 2 inches apart on ungreased cookie sheets. Sprinkle 1/2 teaspoon peppermint candy in center of each slice. 2. Bake for 7 to 11 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets. Cool 15 minutes or until completely cooled. 3. In small saucepan, melt chocolate chips and shortening over low heat, stirring constantly. Drizzle glaze over cooled cookies. Let stand until set. |
