CHOCOLATE GLAZED PEARS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984. Ingredients:
3 cups water |
1/2 cup granulated sugar |
2” lemon peel twist |
6 ripe pears |
6 ounces semisweet baking chocolate |
2 tablespoons shortening |
Directions:
1. In large saucepan combine water, sugar and lemon twist then bring to a boil. 2. Pare pears and trim slightly to level bottom then remove core from blossom end. 3. Add pears to poaching liquid then reduce heat. 4. Cover and gently simmer 90 minutes turning and basting occasionally. 5. Remove pears from liquid and stand on a flat dish then allow pears to cool. 6. Melt chocolate and shortening over very low heat. 7. Dry pears with paper towels. 8. Holding each pear carefully by the stem spoon chocolate mixture over pear to coat. 9. Allow to stand in a cool place for the chocolate to set then serve as desired. |
