Drizzle this over Thai coconut ice cream with coconut rice - sinful! Ingredients:
one 13 oz can coconut milk |
1/3 cup palm sugar |
1 1/2 teaspoons finely grated fresh ginger |
8 ounces semisweet chocolate, chopped |
Directions:
1. Combine coconut milk, palm sugar and ginger in saucepan. Bring to a simmer over medium heat, stirring until the palm sugar dissolves. 2. Remove from heat. 3. Add chocolate and whisk until mixture is melted and smooth. Do not put the pan back on the burner of the chocolate - it will make the chocolate grainy. |
