Just right for fall family get togethers. Ingredients:
3/4 cup butter or 3/4 cup margarine |
1 cup sugar |
3 tablespoons sugar |
1 large egg |
1/4 cup light molasses |
2 1/4 cups all-purpose flour |
1/4 cup unsweetened cocoa |
1 1/2 teaspoons baking soda |
2 -4 teaspoons ground ginger |
1/4 teaspoon salt |
Directions:
1. In a mixing bowl, using an electric mixer, cream the butter. 2. Gradually add in 1 cup of sugar and beat until light and fluffy. 3. Add in the egg; beat well. 4. Stir in the molasses, flour, cocoa, baking soda, ginger and salt by hand; mix well. 5. Cover and refrigerate dough for 30 minutes. 6. Place remaining sugar on a plate. 7. Shape dough into 1-inch balls; roll balls in sugar and place 2-inches apart on a ungreased cookie sheet. 8. Bake in a 350° oven for about 12 minutes or until light brown; transfer to a wire rack to cool. |
