Chocolate Fudge Pecan Cake And Icing |

This is one of the easiest from scratch cake recipes I've seen! Saw this on a local news program a couple of years ago, presented by a local caterer. I have made it several times and it's to die for! Read more ! Moist, fudgey, and deeeee-liciuos! The coke in the icing really gives it a unique flavor, takes about 5 minutes to make - at the most - and I find myself using the icing on other cakes as well. It's an awesome icing for german chocolate or yellow cakes. Ingredients:

2 cups sugar |
2 cups plain flour |
dash of salt |
1 stick butter |
1/2 cup crisco |
6 tablespoons cocoa |
1 cup water |
1/2 cup buttermilk |
1 teaspoon baking soda |
2 eggs |
1 teaspoon vanilla |
l teaspoon cinnamon |
chocolate fudge pecan icing |
1 stick butter |
1/3 cup coke |
4 tablespoons cocoa |
1 lb. powdered sugar |
1 teaspoon vanilla |
1/2 cup chopped pecans. |
Directions:
1. CAKE 2. Grease 9 X 13 cake pan and set oven to 375. 3. Sift together: sugar, flour, & salt. In sauce pan,mix butter, Crisco, cocoa and water; boil, pour over flour mixture and mix. 4. Add buttermilk, baking soda, eggs, vanilla, & cinnamon. 5. Pour in prepared pan and bake for 35 minutes. 6. Leave in pan and prepare icing. 7. ICING 8. In a medium sized saucepan, melt butter; add Coke and 4 tablespoons cocoa. 9. Bring to a boil and remove from heat. 10. Stir in: powdered sugar 11. and vanilla. 12. Beat with mixer until smooth. 13. Stir in 1/2 cup chopped pecans. 14. Quickly spread on cake. |
